I'm thinking of projects where communicating with/about videos and images is an integral part of the work. Think image processing for example. In that context a message of the kind "Hey, I tried this new method, look what I got as a result [image]" can make tons of sense.
If you don't need images, you don't have to use them. If the person on the other end of the chat insists on sending them anyway, why are you talking to them? :P
