It seems to me considerably more likely that they mixed up a batch of un-enriched bucatini, which they sell elsewhere. Or perhaps they got a bad batch of flour on the day they were making bucatini.
Either makes way more sense to me than the bucatini die somehow removing iron from the flour. I'm hardly an expert, of course, but it seems doubtful to me.
